Our production of radicchio rosso tardivo
Besides the production of asparagus, the Azienda Agricola Baraldo specializes in the production of the typical radicchio rosso tardivo.
In comparison with the early-growing (precoce) type, the late-growing (tardivo) radicchio is a finer variety, and since it is cultivated from October to February, it has a more complex production process.
The radicchio tardivo shape is special too, its leaves are long, narrow, tapered and its color is intense, with white-veined red-violet leaves.
The radicchio tardivo can be used in a wide range of recipes, it can be served raw and cooked. Its sweet taste with a slight bitter note is enhanced by its crunchy consistency.
